I am playing for a local show of Secret Garden. Keyboard often uses Tambura. But when I hold that sound, then release, the sound increases and lives for a few seconds. How can I change that behavior? I’m new to using keyboards like these. Thanks

The release knob
The sustain knob
The decay knob

changing’s these will affect duration of the sound

If that is not enough control then

then in voice mode for that sound at the element level change the amplifier envelope release parameter,

If that’s not enough control, and you’re in pattern, or song mode then
issue an all notes off CC message.

Which mode - Voice, Performance, Song/Pattern - is the MOX being played in?

You could certainly modify the amplitude envelope, although the easiest way to stop a sound from playing in Voice mode is to temporarily choose a different one.
