I recently found a stereo pair of voice elements called “Breath L/R”, and added them as elements to one of my wind instruments. Just to clarify, wind instrument musicians have to take a quick (audible) breath after a phrase. After playing around with several attempts to get the voice element to only trigger on key release, I realized that I was totally stumped! Shouldn’t I be able to use ADSR to accomplish this? BTW, I did also try assigning the Aftertouch Control to E-level for the two elements, but that didn’t work out so well in practice. Thoughts?

What you’re apparently looking for is an XA Control setting called “key off sound”. See page 73 of the Rack XS Owner’s Manual.

Also see the last point on page 109 (bottom right of the page) for a possible problem when setting up the Element and its Group relative to the AEG level of related Elements.
