I need to send a click track to the drummer but my hands will be busy.  Can I set up the Foot switch to start the sequencer?  And how?

Yes, with a Utility mode setting. See [F4]CTL ASN, [SF3]FT SW on page 263 of the ES Owner’s Manual. CC 098 is Song/Pattern playback start/stop.
