I have some very nice Grand Piano samples on my ES. I’ve got them set up in a Voice with the velocity switching sorted and they’re good. The problem is, they’re playing in mono and what I want is each note sitting in the right place in the stereo field, like the built-in piano voices.

Can I set this up within the ES itself?

So C1 at the far left and C6 at the far right, for example.

Yes, you can do what you asked about, on a per Element basis.
[EDIT] > [Element #] > [F4]AMP > [SF4]LVL/PAN > set ScalingPan
See page 199 of the ES Owner’s Manual for details.
